I guess it's not specific to 5th gear but more speed. At 70ish in 4th I can duplicate the vibe when letting off the gas it's just not as noticable.

However should I push in the clutch around 75mph oh my gosh it's so loud you'd think something might break. I quickly let the clutch back out. I tried putting it in neutral on the highway, same nasty vibe as just hitting the clutch in 5th. Now I'm confused.

I'm going to try and get it back on jack stands later tonight and maybe have my wife get it up to 75 (with light brakes for resistance) and then hit the clutch. Hopefully I can tell where the noise is coming from.
